Menge: 4 Portionen

750 g Fenchel
Salz
1 Zwiebel (30 g)
10 g Butter
1 cn Tomaten (500 g Einwaage)
Pfeffer aus der Muehle
etwas Zucker
1 bn glatte Petersilie
50 g Mozzarella (ersatzweise 45
- %iger Schnittkaese,
2 Scheiben Baguette (20 g)


Fenchel putzen, waschen, unzerteilt in Salzwasser 30 Minuten leise
kochen lassen. Zwiebel pellen, wuerfeln, in Butter anduensten. Tomaten
mit der Haelfte vom Saft dazugeben, dick einkochen lassen, mit Salz,
frisch gemahlenem Pfeffer und etwas Zucker abschmecken. Petersilie
hacken, dazugeben.

Fenchelknollen aus dem Wasser nehmen, halbieren und in eine
feuerfeste Form legen, mit der Tomatensosse begiessen und mit dem in
Scheiben geschnittenen Mozzarella belegen. Im Ofen bei 200 Grad
15-20 Minuten ueberbacken.
