500 Gram kleine Zucchini
etwas Salz

Soße:

50 Gramm veganer Speck (zum Beispiel von Vivera)
1 Zwiebel
1 Knoblauchzehe
2 Esslöffel Rapsöl
1 Paket Tomatenstücke (etwa 250 Gramm)
etwas Oregano
etwas Salz
etwas Pfeffer, frisch aus der Mühle
etwas Paprikapulver (edelsü0)
ein paar italienische Kräuter (siehe Tipp)
etwas Paniermehl
200 Gramm Sojajoghurt

Zucchini längs halbieren und salzen.

Für die Soße veganen Speck und Zwiebel in Würfel schneiden, Knoblauchzehe
auspressen. Rapsöl erhitzen, veganen Speck, Zwiebel und Knoblauch darin
andünsten. Tomatenstücke dazugeben, mit Oregano, Salz, Pfeffer und
Paprika abschmecken und die Soße in eine Auflaufform geben.

Zucchinihälften auf die Soße legen. Kräuter mit Paniermehl und
Schmand mischen, daraufstreichen und Form in den vorgeheizten
Backofen setzen. E: Mitte. T: 175 Grad Celsius / 30 bis 40 Minuten.
