Menge: 1 Sauce
(1000 Milliliter Sauce)

1 große rote Paprikaschote
4 rote Peperoni
3 rote Chilischoten
1 Knoblauchzehe
2 eingelegte Knoblauchzehen (mit etwas Einlegfluessigkeit)
1 Stück Ingwerwurzel, (daumengross)
200 Gramm Agavendicksaft
200 Milliliter Essig; (*)
2 Esslöffel Zucker
1 Teelöffel Salz
2 Esslöffel Pflanzenöl (zum Beispiel Sonnenblumenöl oder Rapsöl)
4 Esslöffel helle Sojasauce
1 Teelöffel dunkle Sojasauce

Die Paprikaschote waschen, Stielansatz und Samenstraenge entfernen und die
Schote in kleine Wuerfel schneiden. Peperoni und Chilischoten waschen,
Stielansaetze entfernen und die Schoten grob zerkleinern. Die Knoblauchzehe
schaelen. Paprika, Peperoni, Chilischoten und die frische und die eingelegten
Knoblauchzehen mitsamt der Einlegfluessigkeit in der Kuechenmaschine
zerkleinern.

Den Ingwer schaelen und mit einem breiten Messer flachquetschen, bis er
intensiv zu duften beginnt. Agavendicksaft, Essig (siehe Tipp) und alle anderen
Zutaten in einen Kochtopf geben und so lange kochen, bis die Sauce saemig wird.
Nach dem Erkalten muss die Sauce zaehfluessig sein.

Vorbereitungszeit: 15 Minuten Zubereitungszeit: 20 bis 30 Minuten

Anmerkung: Diese schnell gemachte Sauce ist zu Fisch, Fleisch,
Fruehlingsrollen und Reis ein Genuss. Sie sollte eigentlich immer auf dem
Tisch stehen, da sie sich hervorragend zum Nachwuerzen eignet. Ausserdem laesst
sie sich gut aufbewahren.

(*) Essig: In Thailand wird meist der milde Reisessig (drei Prozent Saeure)
verwendet. Man kann jedoch auch Obstessig oder ersatzweise Zitronen- bzw.
Limonensaft verwenden, um den Gerichten die noetige Saeure zu verleihen.
