10 Milliliter Sojamilch (oder andere pflanzliche Milch)
150 Gramm Maisstärke
1 Teelöffel Apfelessig (siehe Tipp)
100 Gramm Reismehl
220 Milliliter lauwarmes Wasser
25 Gramm Teffmehl
100 Gramm Sojajoghurt
25 Gramm Kastanienmehl
10 Gramm Backpulver
9 Gramm gemahlene Flohsamenschalen
10 Gramm brauner Zucker
12 Gramm Tafelsalz

Außerdem:
etwas Backpapier

Heizen Sie schon mal den Backofen auf 230 Grad Celsius (Oberhitze/Unterhitze) vor. Dann füllen Sie ein
Backblech mit etwas Wasser und schieben es in die unterste Schiene. Nun vermischen Sie bitte alle
trockenen Zutaten miteinander. Danach geben Sie den Sojajoghurt, das lauwarme Wasser und den Apfelessig hinzu
und verrühren alles zu einem Teig. Nun bestreuen Sie eine glatte Arbeitsfläche mit dem Reismehl und
rollen den Teig darauf aus. Aus dem Teig formen Sie anschließend einen Brotlaib und bestreichen ihn mit
ein bisschen pflanzlich Milch (damit das Brot nach dem Backen schön glänzt). Danach legen Sie ein Backblech mit
dem Backpapier aus und geben den Teig darauf. Dann müssen Sie das Mischbrot bitte auf der mittleren
Schiene etwa 20 Minuten Backen. Danach reduzieren Sie die Hitze auf 190 Grad Celsius und nehmen das
Backblech mit dem Wasser aus dem Backofen. Das Brot wird nun weitere 35 Minuten gebacken und muss danach
komplett abkühlen.
