Menge: 1 Laib

2 Esslöffel Margarine (vegane)
210 Gramm Walnuss-kerne
1 Messerspitze geriebener Ingwer
500 Milliliter Wasser
1 Würfel frische Hefe
1 1/2 Teelöffel Zitronensaft
500 Gramm Dinkel-Vollkornmehl (gesiebt)
200 Gramm Soft-Aprikosen
2 gehäufte Teelöffel Tafelsalz
1 Mango
2 Esslöffel Apfelessig (siehe Tipp)

Außerdem:
etwas Mehl (zum Ausstäuben)

Hacken Sie zuerst die Walnuss-kerne. Danach erwärmen Sie das Wasser in einem Wasserkocher, lassen es
ein wenig abkühlen (es soll nur nicht mehr kochen) und lösen die Hefe darin auf. Das gesiebte Mehl
mischen Sie danach mit dem Tafelsalz in einer Schüssel und geben die Walnüsse sowie die Hefe hinzu. Danach
kneten Sie aus den Zutaten einen Teig, fetten eine Kastenform mit der Margarine ein und stäuben die
Form mit dem restlichem Mehl aus. Nun geben Sie den Teig in die Form und heizen den Backofen auf
200 Grad Celsius (Umluft) vor. Das Brot wird danach etwa 30-35 Minuten gebacken. Nach der Backzeit
lassen Sie das Brot auskühlen und nehmen es dann aus der Form.

Jetzt entkernen und schälen Sie bitte die Mange und pürieren das Fruchtfleisch mit den Aprikosen und
dem Zitronensaft fein. Unter das Püree mischen Sie danach noch den geriebenen Ingwer und servieren das
Brot zum Schluss mit dem Aufstrich.
