200 g Spinat
Salz
200 g Kartoffeln (vorw.
- festkochend)
30 g Pinienkerne
200 g Mozzarella
1 tb Kapern
1 ts Zitronensaft
Pfeffer
Muskatbluete
100 ml Waldpilzfond
80 ml Schlagsahne
1 Schalotte
1 tb Oel
Butter; fuer die Form

Spinat blanchieren.

Pinienkerne ohne Fett roesten. 1/3 klein hacken. Kaese in duenne
Scheiben schneiden. Kartoffeln schaelen, in Scheiben schneiden. Die
Haelfte der Kapern hacken, mit Zitronensaft, Fond, Sahne, Pfeffer und
Muskat verruehren. Schalotten abziehen, fein wuerfeln, in Oel
anschwitzen. In 4 gefettete Foermchen verteilen. Dann nacheinander
Kartoffeln, Spinat und gehackte Pinienkerne und Kapern einschichten.
Sauce uebergiessen. Zugedeckt bei 200 Grad (Gas: Stufe 3) backen. Kaese
und Nuesse daruebergeben, 5 Min offen ueberbacken.
