Menge: 1 Portion

1 kleine Dose Tomaten, gestückelte
200 Gramm Zucker, braun
150 Milliliter Essig (Apfelessig, siehe Tipp)
200 Milliliter Whiskey (Jack Daniels)
1 EsslöffelPflanzenöl
1 große Zwiebel
1 Prise Salz
etwas Pfeffer, frisch aus der Mühle
eventuell Tabasco bei Bedarf

Die Zwiebel schälen Sie, schneiden sie in feine Würfel und dünsten sie in heißem Öl glasig.
Den Zucker geben Sie hinzu und karamellisieren ihn unter ständigem Rühren leicht. Dann
löschen Sie mit Apfelessig und Whiskey ab und geben die Tomaten hinzu. Anschließend lassen Sie
alles bei milder Hitze so lange einkochen, bis eine dickflüssige Masse entsteht, dabei müssen Sie
gelegentlich umrühren (das Einkochen dauert etwa 35-40 Minuten). Abgeschmeckt wird mit Pfeffer, Salz
und eventuell Tabasco.
