1 Zwiebel
1 Knoblauchzehe
1 Teelöffel Distelöl
1 Esslöffel Apfelessig (siehe Tipp)
200 Milliliter Gemüsebrühe
20 Gramm Sauerampfer
1 Prise Zucker
1 Esslöffel Kartoffel mehlig fein gerieben
1 Prise Pfeffer frisch aus der Mühle
1 Prise Salz
1 Prise Muskat gemahlen

Schneiden Sie die Zwiebeln (in Würfel) und den Knoblauch klein und rösten Sie sie im Topf im
Distelöl an. Danach löschen Sie mit dem Apfelessig ab und gießen die Gemüsebrühe auf. Den
Sauerampfer, den Zucker und die geriebene Kartoffel fügen Sie nun hinzu und lassen alles für
etwa 8-9 Minuten köcheln. Zum Schluss wird die Suppe mit dem Mixer püriert und mit Salz
(Vorsicht, die Brühe ist salzig), dem Pfeffer und etwas Muskat abgeschmeckt.
