100 GrammBrote (Schwarzbrot)
6 ZentiliterRotwein
2 Eier (Größe M)
1 PriseTafelsalz
95 GrammButter
80 GrammPuderzucker
1 MesserspitzeZimt, gemahlen
Orangen - Schale, geriebene

1/2 Paket Vanillezucker
25 GrammHaselnüsse, geriebene
1/4 LiterWein, rot
2 EsslöffelZucker
1/4 StangenZimt
1 Nelke
2 Eigelb (Größe M)

Heizen Sie den Backofen auf 200 Grad Celsius vor (Umluft).

Das Schwarzbrot erst entrinden, zu Bröseln reiben, mit den 6 Zentiliter Wein übergießen und dann quellen lassen.
2 Eier trennen und mit etwas Tafelsalz steif schlagen. Jetzt 75 Gramm von der weichen Butter mit den Eigelben und dem
Puderzucker schaumig rühren, das Zimtpulver, die fein gehackte Orangenschale, die Haselnüsse und die Schwarzbrotbrösel
zugeben und alles gut vermengen.

Ein Drittel des Eiweißschnees anschließend unter die Masse rühren und den Rest vorsichtig unterheben. Nun 4 Förmchen
mit der Rest Butter ausstreichen, die Masse einfüllen, die Förmchen in einen Bräter mit 2 Zentimeter heißem Wasser
setzten und im vorgeheizten heißen Ofen etwa 20 bis 25 Minuten garen. In der Zwischenzeit sollen Sie den ¼ Liter
Rotwein mit dem Zucker, Zimtstange und Nelken aufkochen, abkühlen lassen und schließlich über Wasserdampf eine schaumige
Soße schlagen. Zum Schluss pber die gestürzten, auf Tellern angerichteten Puddings geben.

Dem Glühwein zum Kochen noch eine Spirale aus einer Zitronenschale dazugeben. Das Schmeckt noch aromatischer.
